Bhary Bahigan Recipe
Ajza
- 1 kg baingan (4-5 medium)
- 4-5 medium pyaz (chopped)
- 4-5 medium tamatar (chopped)
- 1 tablespoon dhania
- 1 tablespoon zeera
- 1 tablespoon laalmirch
- 1 teaspoon haldi
- 1 tablespoon garam masala
- 1 tablespoon namak
- 1/4 cup oil
Filling ke Ajza:
- 1 pyaz (blend kia hua)
- 2 tamatar (brek chop kiye hue)
- 3 green chilli (bareek cut ki hui)
- Half teaspoon namak
Tarika:
1. Baingan ko achi tarah wash karke un par gahre cut laga lein.
2. Filling wala mixture taiyaar karein.
3. Cut kiye hue baingan main filling wala mixture achhi tarah bhar dein.
4. Ek bartan main oil garam karein, chopped pyaz, tamatar, aur tamam masale daal kar saute karein.
5. Bhare hue baingan ko bartan main rakh kar 20 minutes tak halki anch par pakayein.
Stuffed eggplant (masala baingan)
Ingredients:
- 1 kg eggplants (4-5 medium)
- 4-5 medium onions (chopped)
- 4-5 medium tomatoes (chopped)
- 1 tablespoon coriander powder
- 1 tablespoon cumin seeds
- 1 tablespoon red chili powder
- 1 teaspoon turmeric powder
- 1 tablespoon garam masala
- 1 tablespoon salt
- 1/4 cup oil
Filling:
- 1 onion (blended)
- 2 tomatoes (finely chopped)
- 3 green chilies (finely chopped)
- Half teaspoon salt
Method:
1. Wash and make deep cuts in eggplants.
2. Prepare filling mixture.
3. Stuff filling mixture into eggplants.
4. Heat oil, add chopped onion, tomatoes, and spices. Sauté.
5. Add stuffed eggplants, cook on low heat for 20 minutes.
