Chicken Malai Handi Recipe
Ingredients
Boneless chicken:500g
- Ginger Garlic Paste
: 1 tsp
- Yogurt:
1/2 cup
- Coriander Seeds Powder: 1/2 tsp
- Crushed Roasted Cumin Seeds: 1 tsp
- Black Pepper Powder: 1/2 tsp
- Turmeric Powder: 1/4 tsp
- Garam Masala Powder: 1/2 tsp
- Salt: 1 tsp
- Cooking Oil: 1/4 cup
- Chopped Onion: 1 medium-sized
- Tomato Paste: 2 medium-sized
- Cashew Nuts: 15 to 20
- Milk: 1/2 cup
-Green Chilies: 8 to 9
- Crushed Dried Fenugreek Leaves: 1 tsp
Method
1. Marination:
- Boneless chicken ko ek bowl mein dalain, tamam spices (ginger garlic paste, yogurt, coriander seeds powder, crushed roasted cumin seeds, black pepper powder, turmeric powder, garam masala powder, aur salt) ke sath marinate karain aur 1 ghante ke liye rakhain.
2. Onion Preparation:
- Chopped onion ko pan mein ghee dal kar halka fry karain.
3. Cook Chicken:
- Chicken dalain, pehle halka aanch par 5 minute pakain, phir aanch tez karain aur paani khushk karain, phir masalon ko pakain.
4. Add Tomato Paste:
- Tomato paste dalain aur 10 minutes tak halka aanch par pakain.
5. Prepare Cashew Nut Mixture:
- Cashew nuts ko doodh mein daal kar grind karain, phir chicken mein add karain aur 3 minutes ke liye pakain.
6. Final Touch:
- Zeera powder aur kasuri methi dalain, garnish ke liye dhania dalain.

Method
1. Marination:
- In a bowl, add boneless chicken and marinate it with all the spices (ginger garlic paste, yogurt, coriander seeds powder, crushed roasted cumin seeds, black pepper powder, turmeric powder, garam masala powder, and salt) and let it sit for 1 hour.
2. Onion Preparation:
- Heat cooking oil in a pan and lightly fry the chopped onion until golden.
3. Cook Chicken:
- Add the marinated chicken to the pan, cook on low heat for 5 minutes, then increase the heat and cook until the water dries up and the spices are well combined.
4. Add Tomato Paste:
- Add the tomato paste and cook on low heat for 10 minutes.
5. Prepare Cashew Nut Mixture
:
- Grind the cashew nuts in milk, then add this mixture to the chicken and cook for an additional 3 minutes.
6. Final Touch
- Add crushed roasted cumin seeds and crushed dried fenugreek leaves, and garnish with chopped coriander
