Here’s a simple recipe for Meethy Pakora (Sweet Fritters):
Ingredients:
- For the batter:
- 1 cup gram flour (besan)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Water (as needed for the batter consistency)
- For the filling:
- 1 cup grated coconut (fresh or desiccated)
- 1/2 cup jaggery or sugar (adjust to taste)
- 1/4 teaspoon cardamom powder
- A pinch of salt
- Chopped nuts (optional, such as almonds or pistachios)
- For frying:
- Oil (for deep frying)
Instructions:
1. Prepare the Filling:
- In a bowl, combine the grated coconut, jaggery or sugar, cardamom powder, and a pinch of salt. Mix well until the jaggery or sugar is well incorporated. If using, add chopped nuts and mix.
2. Make the Batter:
- In another bowl, mix the gram flour, baking powder, and salt. Gradually add water to make a smooth batter. The consistency should be thick enough to coat the back of a spoon.
3. Heat the Oil:
- In a deep frying pan or wok, heat oil over medium heat. To check if the oil is hot enough, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
4. Stuff the Pakoras:
- Take a small portion of the coconut filling and shape it into a small ball or flat disc. Dip it in the gram flour batter to coat it completely.
5. Fry the Pakoras:
- Carefully drop the coated filling into the hot oil. Fry in batches, making sure not to overcrowd the pan. Fry until they turn golden brown and crispy on all sides, about 3-4 minutes.
6. Drain and Serve:
- Remove the pakoras with a slotted spoon and drain on paper towels to remove excess oil. Serve hot with mint chutney or ketchup.
- You can adjust the sweetness according to your taste by adding more or less jaggery or sugar.
- For extra flavor, you can add a bit of grated ginger or a few drops of vanilla essence to the coconut mixture.
Enjoy your delicious Meethy Pakoras!
