Moong Dal Halwa Recipe
Ingredients
- Moong dal (peeli daal): 1 cup
- Ghee (desi ghee): ½ cup
- Sugar (cheeni): ¾ cup (adjust to taste)
- Milk (doodh): 2 cups
- Water (pani): 1 cup
- Cardamom powder (elaichi powder): ½ teaspoon
- Chopped nuts (kategay huye mewa): ¼ cup (almonds, pistachios, cashews)
- Raisins (kishmish): 2 tablespoons (optional)
Instructions (Tareeqa):
1. Prepare the Moong Dal (Moong Dal Ki Tayari):
- Rinse the moong dal thoroughly and soak it in water for at least 2 hours. Drain the water.
- Moong dal ko achi tarah dho kar 2 ghante ke liye pani mein bhigo dena. Pani nikaal dena.
2. Cook the Moong Dal (Moong Dal Pakana):
- In a blender, grind the soaked moong dal to a coarse paste without adding water.
- Ek blender mein, bhigi hui moong dal ko bina pani daalein coarsely grind karna.
3. Make the Halwa (Halwa Banana):
- Heat ghee in a heavy-bottomed pan on medium heat. Add the ground moong dal and sauté for about 10-15 minutes, stirring continuously until it turns golden brown and fragrant.
- Ek bhari pan mein, ghee ko madhyam aanch par garam karein. Usmein ground moong dal daal kar 10-15 minutes tak bhunain jab tak yeh sona rang aur khushboo nahi chhod deti.
4. Add Milk and Water (Doodh Aur Pani Dalna):
- Add the milk and water to the pan, stirring well to combine. Bring the mixture to a boil, then reduce the heat to low. Cook, stirring occasionally, until the dal absorbs the liquid and becomes thick.
- Pan mein doodh aur pani daal kar achi tarah milayein. Mixture ko ubalne dein, phir aanch dheemi kar dein. Kabhi kabhi hilaate hue pakain jab tak dal liquid absorb na kar le aur gaadha ho jaye.
5. Add Sugar and Cardamom (Cheeni Aur Elaichi Dalna):
- Once the mixture is thick, add sugar and cardamom powder. Stir well and continue to cook for another 5-10 minutes until the sugar dissolves and the halwa thickens further.
- Jab mixture gaadha ho jaye, tab cheeni aur elaichi powder daal kar achi tarah milayein. Aur 5-10 minutes tak pakate rahein jab tak cheeni pighal jaye aur halwa aur gaadha ho jaye.
6. Add Nuts and Raisins (Mewa Aur Kishmish Dalna):
- Stir in the chopped nuts and raisins (if using). Cook for an additional 2-3 minutes.
- Kategay huye mewa aur kishmish (agar istemal kar rahe hain) daal kar achi tarah mila lein. Aur 2-3 minutes tak pakain.
7. Serve (Serve Karna):
- Remove from heat and serve warm or at room temperature. Garnish with additional chopped nuts if desired.
- Aanch se utaar kar garam ya room temperature par serve karein. Agar chahein to aur mewe se garnish kar lein.
