Ingredients:
- 1 cup rice noodles
- 2 cups mixed veggies (bean sprouts, carrots, green onions)
- 1 cup cooked shrimp
- 2 eggs, beaten
- 2 tbsp vegetable oil
- 2 tbsp tamarind paste
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 1 tsp ground peanuts
- Salt and pepper, to taste
- Lime wedges, for serving
Instructions:
1. Cook the Rice Noodles:
Boil the rice noodles according to package instructions, drain, and set aside.
2. Stir-Fry the Vegetables and Shrimp:
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the mixed veggies and cooked shrimp, stir-frying until they are tender.
3. Add the Eggs:
Push the veggie and shrimp mixture to the side of the skillet. Pour the beaten eggs into the skillet and scramble them until fully cooked. Mix everything together.
4. Prepare the Sauce:
In a small bowl, combine tamarind paste, fish sauce, palm sugar, and ground peanuts.
5. Combine Noodles and Sauce:
Add the cooked rice noodles to the skillet. Pour the sauce over the noodles and mix everything well, ensuring the noodles are coated evenly.
6. Season and Serve:
Season with salt and pepper to taste. Serve hot with lime wedges on the side.
